This is a serious potato salad fit for a king; with eggs, bacon, red onion and celery.

This easy to make dressing adds lots of flavor for a special salad.
Honey Apricot Dressing
4 oz peeled Apricot Halves; pitted (you can use canned)
1/2 c Dairy Sour Cream
2 T Honey
1 1/2 tsp Lemon Juice
